The Scottish Prince, Gold Coast
IF there was ever a prime example of the Gold Coast’s cultural metamorphosis, it’s the Scottish Prince, a dimly lit hidden gem at Palm Beach.
It may be technically a whisky bar, named after a ship which ran aground near Main Beach in 1887, however the passionate bar staff are cocktail masters and whipped up one of the best Tommy’s margaritas – similar to a traditional margie but with a touch more tequila and agave syrup instead of Triple Sec – I’ve ever had.
Scottish Prince’s sister bar Cambus Wallace at Nobby Beach is also earning rave reviews for their Spiced Pumpkin Margarita; the perfect winter tipple.

Bar Patron, Sydney
Setting a new benchmark for Mexican restaurants in Australia, this late-night eatery and tequila bar is a must for a margie when in the Harbour City.
Not only does Neil Perry’s high-end hacienda at Circular Quay boast sophisticated décor, views of the Harbour Bridge and serve up fresh authentic Mexican cuisine, the drinks list offers a selection of bespoke Patron spirits, a tequila version of a gin and tonic and classic margaritas – available with Silver, Roca or Platinum tequila.
However, if you’re in the mood for a seriously luxe night out, the Millionaires Margarita is the establishment’s cocktail du jour.
Made tableside, the top-notch tipple will set you back $100 and is made from the premium Patron Gran Burdeos tequila, Remy Martin Louis XIII Cognac, liquid nitrogen chilled finger lime pearls and freshly squeezed lime and agave juice.
Caballitos, Perth
This lively basement bar on Queen Street in Perth’s CBD is the place to go for tequila, mezcals, tasty Mexican street food and good times.
Tucked away in the basement of the old 1907, Caballitos [Little Horse ] is a brightly decorated haunt where you can pull up a chair at the bar and sample a signature Largerita – a frozen margarita and beer combination – as well as their take on a Tommy’s margarita or a shaken or frozen version of the world’s most loved tequila cocktail.
Mesa Verde, Melbourne
There’s no denying eating and drinking is a favourite pastime in Australia’s cultural capital.
There are so many options for authentic Mexican food and drinks in Melbourne but it’s hard to go past Mesa Verde, where the margarita game is strong.
Located on the sixth floor of Melbourne’s iconic Curtin House in the CBD, Mesa Verde boasts one of Australia’s largest collection of agave spirits, and their Margarita La Casa [$19] has been hailed as one of the city’s best.
Better yet, you can select from 14 different types of salt – from black truffle to Spanish Rosemary – to customise your margarita.
